Fast-Casual Restaurant Portillo's Onboards Tony Darden As COO for National Expansion

Fast-casual restaurant company Portillo's has announced the appointment of Tony Darden as Chief Operating Officer (COO). Darden brings over 30 years of experience in the restaurant industry to his new role, where he will play a crucial part in enhancing operations as Portillo's plans for a national expansion. Darden will officially start with the company on December 9, 2024.
Michael Osanloo, CEO and President of Portillo's, expressed his excitement about Darden joining the team, praising his ability to improve operations and inspire teams. He emphasized that Darden's vast experience will be key in scaling their brand while remaining committed to high-quality service and unique guest experience.
Darden previously worked as COO for Jack in the Box, managing operations for over 2,200 locations in 21 states. Notably, he introduced AI order-taking systems to improve efficiency and customer service. Darden has also served as President of MOOYAH Burgers, COO at Taco Bueno and Sun Holdings, and Vice President of Operations at Panera Bread.
As COO, Darden will oversee Portillo's operational strategy and execution. He will ensure a seamless experience for guests and team members as the company expands, staying true to its origins. With plans to operate as many as 920 locations, including full-scale restaurants and Portillo's Pick-Up locations, Darden's dedication to innovation and operational excellence aligns with the company's long-term goals.
Portillo's will open its first "Restaurant of the Future" in Grapevine, Texas in December. This location will feature a more efficient design, plenty of seating, and options like kiosks and a Grab and Go area for a top-class guest experience.
