Cousins Maine Lobster to Launch Four New Food Trucks in the Southwest
Cousins Maine Lobster has announced plans to expand its food truck operations by adding four new units in Albuquerque, El Paso, Phoenix, and Tucson by 2027.
Cousins Maine Lobster has signed an agreement to expand its food truck operations in the Southwest United States. The company plans to introduce four new trucks across New Mexico, Texas, and Arizona. This expansion is set to meet the increasing demand for seafood in the region.
The first of these new trucks is scheduled to begin operations in Albuquerque, New Mexico, in May 2026. Following this, a truck will launch in Phoenix, Arizona, in August 2026. Two additional trucks are planned for El Paso, Texas, and Tucson, Arizona, with openings slated for 2027.
The expansion is led by entrepreneurs Chris Wilson and Gary Andrews, who have previously launched two trucks in Lubbock, Texas. Their experience in the region has reportedly built a strong customer base, prompting further growth into new markets.
Cousins Maine Lobster has been expanding its presence across the United States, opening nearly 20 new units this year in locations including Milwaukee, Wisconsin; Grand Rapids, Michigan; Albany, New York; Morgantown, West Virginia; and Winston-Salem/Greensboro, North Carolina. The company aims to open 100 units in the first half of 2026, covering more than 35 states.
The company is actively seeking operators interested in launching food trucks, emphasizing a business model that allows for flexibility and lower overhead costs. Current target markets for expansion include Charleston, South Carolina; the Midwest; and the West, including Reno, Nevada.
