Cousins Maine Lobster Expands in Lubbock, TX with Second Food Truck

Cousins Maine Lobster has introduced a second food truck in Lubbock, Texas, operated by local business owner Chris Wilson. This expansion is part of the company's strategy to increase its presence in Texas, where there is a growing demand for seafood options.

The new truck will offer a menu that includes Maine lobster rolls, lobster tacos, lobster grilled cheese, and whoopie pies. This addition follows the successful launch of Wilson's first Lubbock truck in October 2024. Wilson, who has a background in the restaurant industry, decided to expand after observing high demand during a visit from a Dallas-based Cousins Maine Lobster truck.

Wilson has also signed agreements to expand into the New Mexico and Arizona markets. The expansion strategy is supported by a business model that allows operators to launch food trucks within three to six months, with low overhead and labor costs. This model is designed to facilitate efficient market entry.

Cousins Maine Lobster is targeting additional markets for expansion, including San Diego, California; Reno, Nevada; and several locations in the Midwest, such as Des Moines, Iowa, and Nebraska. The company is seeking operators who are interested in providing seafood options in these areas.
