Chicken Salad Chick to Open Third Kansas Location in Derby on June 30

Chicken Salad Chick will open its third Kansas restaurant at 2600 N. Rock Road in Derby, with the grand opening set for Tuesday, June 30. The new location will feature a drive-thru and will offer in-restaurant dining, take-out, third-party delivery, and catering services.

The Derby restaurant is owned and operated by Troy Morrison, who also operates more than 100 Taco Bell and Wingstop locations nationwide, as well as 26 Chicken Salad Chick restaurants across Indiana, Kansas, Oklahoma, and Texas. The Derby opening marks Morrison's eighth Chicken Salad Chick grand opening. Morrison also owns the Wichita-Maize location, which opened in December 2025. He holds development rights for 11 locations in the greater Austin area, with plans to open a third Chicken Salad Chick location in Leander and another in Carrollton in the Dallas-Fort Worth market this fall, pending any construction delays.

As part of pre-opening Friends & Family events, the Derby restaurant will raise funds for the Love, Chloe Foundation, a non-profit organization supporting families facing a childhood cancer diagnosis. The restaurant will operate Monday through Saturday from 10 a.m. to 9 p.m.
