Chicken Salad Chick Opens Its 300th Location in Melbourne, Florida

Fast-casual restaurant chain Chicken Salad Chick has unveiled its 300th location at 1301 S. Babcock St. in Melbourne, Florida. This milestone follows a period of strong growth for the brand, which established 37 new stores in 2024 and an additional 21 during the first half of 2025.

To mark the occasion, the brand will be holding a grand opening event on May 7, during which the first 100 guests in line will receive free chicken salad for a year. Additional promotions will be available throughout the opening week, including giveaways and special deals.

The Melbourne branch of Chicken Salad Chick is owned by first-time franchisees Allison Gibson and Cathy Brown, a mother-daughter team. Before joining the brand, Gibson worked in the dental industry for 12 years, while Brown functioned as a general manager at LensCrafters for over two decades. Their combined experience brings a wealth of customer service and team leadership to the new venture.

Chicken Salad Chick offers a variety of scratch-made chicken salad flavors, side salads, soups, sandwiches, and desserts. The Melbourne location will provide in-restaurant and outdoor patio dining, curbside pick-up, take-out, third-party delivery, and catering services.

The company has seen substantial growth over the past decade under the leadership of CEO Scott Deviney. Starting with only 32 branches in six states, the brand has expanded nearly tenfold and is planning to open more locations, including a debut in Kansas, its 22nd state.

Community involvement is a key focus for Chicken Salad Chick. The brand's charitable arm, CSC Foundation, supports CURE Childhood Cancer and local food banks, and the Melbourne branch will raise funds for The Children's Hunger Project during pre-opening events.

The Melbourne outlet will operate from Monday to Saturday, from 10:30 am to 8:00 pm.
