The restaurant will feature updated decor and a refreshed menu that includes both enhanced items and original favorites. The menu highlights include the Original Chimichanga, Quesabirria Tacos, Seafood Enchiladas, Manchego Burger, Original Nachos Grande, and El Burro Con Queso. The establishment aims to provide a modern dining experience while retaining elements familiar to longtime patrons.
The St. Louis Park location will operate Monday through Thursday from 11 a.m. to 10 p.m., Friday and Saturday from 11 a.m. to 11 p.m., and Sunday from 11 a.m. to 9 p.m. Reservations can be made through OpenTable.
The reopening is led by Michael McDermott, who is involved in the brand's relaunch efforts. The company has also engaged in an equity crowdfunding campaign through StartEngine, raising over $2.3 million from more than 2,000 investors. The campaign is nearing its conclusion, but investment opportunities remain available.
