And the popularity of "small plates" dining will only get bigger.

Those are among the predictions of where food is headed in 2006, according to the Center for Culinary Development, which tracks trends and develops products for major food companies and restaurant chains.

Of growing importance to consumers is knowing where food comes from, down to the farm where it was harvested, food experts say. Restaurants have long been the driving force behind this.

"They don't just say, 'This is a salad,' " said Jeff Cirese of the Center for Culinary Development.

On the menu at Blackbird restaurant in the West Loop, one might see that the veal sweetbreads are from "Tracy Lynn's farm" and the suckling pig from "Wettstein Farm."

Consumers may start seeing more details like this on store shelves as well, particularly with chocolate, another hot food item for the coming year, experts say.
