Salad Chain Plans National Expansion

Tossed, a gourmet salad restaurant chain, plans to open 20 franchises in Metro Detroit over the next three to five years as part of a push to add hundreds of locations nationwide.

No leases have been signed, but cities such as Dearborn, Farmington Hills and Novi, with strong office and retail markets, would be ideal, said Eric Schmitt, president and CEO of Tossed Franchise Corp. in Ft. Lauderdale, Fla.

"Detroit, when it comes to the quick casual restaurant business, has done extremely well," Schmitt said. "When you look at the volume compared to other cities, Detroit is always on the top tier. You have a very strong workforce that tends to eat out every day."

But analysts said opening 20 restaurants in Metro Detroit may be too risky, especially for a rebounding market such as Metro Detroit. Locally, Tossed will compete with restaurants such as Panera and Cosi.
