  • Restaurant News Resource Opening a health food restaurant involved knowing your market, your customer, your costs and so much more.

As customers become more and more demanding of what they expect when they go to the store or out to eat, the health food industry is a great market to be in at the moment.  But wait!  Before you jump in head first, let’s first review what you will need to know in order to successfully open a health food restaurant.

First, as with any restaurant, begin with your customer as your primary objective.   So what does the average Joe looking for a healthy meal want?  Let’s start with what comes to mind when one thinks healthy – light, small portions, simple food, not fried, etc..  Stop where your mind it racing to for a second.  Before we focus on food, let’s discuss what these thoughts mean in terms of your local.  How do you accomplish these thoughts of food with your ambiance?

When it comes to colors, lighter shades and colors will create that ambiance.  Mixed with lots of white, yellow, red, green, or blue will inspire the “feel”  that you are going for.  Why white?  When people think white, they think clean.  When people think healthy, they think clean.   Staying with the cleanliness theme, let’s hammer down the importance of a well-organized, clean restaurant.  Your customers will associate how clean your restaurant is with how healthy the food is.  Always make sure that your place speaks who you are to your customers.

Now, the location of your place also needs to be taken into account.  While the trend of health food restaurants is growing, it is still not as popular as a burger and fries.  Therefore, make sure that you are accessible to your target group.  Finding a location near a large popular gym makes plenty of sense.  Also, being near spas, hair salons, and health food stores such as Whole Foods ensures that you are easy for your potential clients to find.

Now, for the hard part, being a health food restaurant means meeting many demands.  You must make sure to team up with a chef who truly understands how many calories are too many calories to not be considered healthy.  You must also be up to date on the latest health news to ensure that what you offer is always up to par with industry standards.   In a normal restaurant your recipes are more closely guarded than Fort Knox.  However, in a health food restaurant, you must be ready to disclose all.  Your customer expect to know exactly what they are eating and how much of it.  No one will take it just on your word that the dishes are healthy.

A final detail that may seem small, but is of the utmost importance is your relationship with your providers.  You must ensure that they have your expectations clear and that they can meet your demand.  One of the worst things that could happen to your restaurant would be for one or two items to be out of stock.  At that moment you have two options.  One, you cannot not offer the dishes impacted.  The second and much worse decision is to run to the local grocery store and find substitute items.

While we have just begun to scratch the surface, what we have here so far is good starting point for what you need to consider and do as you open your health food restaurant.
