Students from Cornell Universitys School of Hotel Administration are collaborating with the Chef de Cuisine of Café Atlántico and Minibar, Chef Katsuya Fukushima, to create a special one-night dinner event. The evening event is set for Saturday, April 30, 2011, and will take place at the School of Hotel Administration.
The Chef
Chef Katsuya Fukushima graduated from the University of Maryland with a double major in mathematics and art, then went on to study at L’Academie de Cuisine in Maryland. His past restaurant work experiences include Vidalia, Cashion’s Eat Place, the National Press Club, Jaleo, and El Bulli.
The Cuisine
Fukushima’s cuisine is charming, playful, and incredibly creative. This can be seen in the innovative “ravioli” his kitchen produces using paper thin slices of pineapple, jicama, and mango in place of conventional pasta. He has had many accomplishments throughout his career so far, including his victory in an episode of Iron Chef America. Working together, the students and Fukushima will create the menu for the event.
Guest Chefs
Guest Chefs is a course taught in the School of Hotel Administration, which gives students the opportunity to work in a professional environment and manage major culinary events. This course improves students’ overall awareness of current culinary trends, allowing them direct interaction with recognized experts in the field.
